3 step veg soup

 1 white onion, diced
 2 garlic cloves, crushed
 1 butternut squash, peeled, cored & cubed
 1 sweet potato, peeled & cubed
 1 carrot, halved & sliced
 500 ml veggie stock
 1 tsp dried thyme
 0.50 tsp dried sage
 1 pinch salt & pepper

Put everything into a large pot with a lid, bring to a boil over a high heat and then turn down to a simmer,


Let the mixture simmer for 15-20 minutes with the lid on until everything is soft,


Transfer to a food processor and blitz until smooth,


Enjoy with toasted multigrain bread or a warm wholemeal roll.
