Power Pancakes

Yields1 Serving

 1 banana
 3 tbsp wholemeal flour
 2 tbsp milled flaxseed (linseed)
 0.50 tsp baking powder
 1 tsp ground cinnamon
 125 ml milk (I use Almond)
 1 tsp margarine (for the pan)
 agave syrup (or other sweetener), optional
 50 g fresh berries

In a mixing bowl, mash the banana,

Add the flour, flaxseed, baking powder, cinnamon and milk to the bowl and stir together until it forms the consistency of double cream,

Heat a large frying pan over medium/high heat and add the margarine, moving it around so that the whole base of the pan is covered,

Using a serving spoon, spoon the pancake mixture into the pan, leaving a little space between each one, (I can normally get 5 pancakes in a single pan)

When the pancake stops sticking to the pan, use a plastic spatula to flip it over and cook on the other side,

Stack the pancakes up high, cover with the fresh berries and a drizzle of syrup,
