Awesome for a gym snack or when you're out on a hike, these energy balls will give you the boost you need!
Soak 1/2 the dates in boiled water for 2 minutes, then drain and press dry with kitchen towel,
Add the peanut butter, all the dates, flaxseed, desiccated coconut and cocoa powder (if using) to a food processor,
Blitz everything together for 30-45 seconds until everything is combined,
Add the oats and blitz for another 5-10 seconds,
Using your hands, mould the mixture into balls that are slightly smaller than a golf ball,
OPTIONAL - Pour some more desiccated coconut onto a plate and roll the ball around to coat it with the coconut,
